This program enables each participant to have a hand's on wine making experience, learn tips and techniques for making wine from kits, and take home the "fermented fruits" of your labors - three wines - a red, a white, and a "refreshment" wine just in time for enjoying this summer and fall! Must be 21 years old to participate.

The course gather four nights over six weeks from 6-8pm (every other Tuesday).
Session 1 - an overview of the wine making process and setting up the conditions for fermentation of wine.
Session 2 - we start the clarifying process and spend time on the "sensory appreciation" of wine.
Session 3 - we finish the clarifying process and discuss common wine-making mistakes.
Session 4 - Bottling! We also discuss and experience the benefits of decanting, aerating, and aging wine.

This is the Japanese art of crocheting small animals or toys. The dolls are done in single crochet in the round. Amigurumi are made up of parts that are crocheted, stuffed, and sewn together. The parts are usually an over-sized round head, a cylindrical body, arms and legs, ears, tail and embellishments. In this class we will make a cute little elephant. Bring whatever color(s) yarn you would like your doll to be, a G hook, fiber fill, felt for eyes and other parts and a tapestry needle.

In these two classes you will learn to decorate holiday cookies and delicious sugar cookies with royal icing just like you see in the magazines. Great for gifting or just creating a centerpiece for your home. In the first class we will be decorating Holiday cookies. Bring in your prebaked sugar cookies shaped like candy canes, gingerbread girl/boy, stocking, angel, star, bell, snowman, and tree and you will learn how to dress these up using royal icing techniques. For the second class we will decorate round, square or heart shaped sugar cookies using brush embroidery technique.

By the end of 6 weeks, you will be able to create a professional looking cake by yourself. Your new skills will enable you to bake and decorate for family birthdays, anniversaries, holidays, and fun special occasions. Once you learn the basics, and practice, the possibilities are endless. Many of our students have even gone on put their skills to work for them as cake decorating professionals.

You will learn how to tort and frost your cake and color tint your icing. Using butter cream frosting, you will learn to make beautiful borders, ruffles, basket weave and flowers such as the mighty rose. Other techniques include delicate piping, writing, string and scroll work. You will also learn the ombre petal or rosette design technique of covering the whole cake. Our final cake will be a two tiered cake. Note: The first class will be a Demo class, so you do not need a cake or frosting that day, however, please do bring your supplies. Classes 2-6 you are expected to bring cake and frosting to class.

FALL INTRODUCTION TO DIGITAL PHOTOGRAPHY (TEEN +)

During this session we will be taking advantage (weather permitting) of the September sunshine and heading outside to photograph on the Roudenbush grounds. Beginning students will learn basic photographic principles such as the camera and it's controls, how to use aperture and shutter speed together to get a proper exposure, white balance, tricky lighting situations and how to get the image right "in the camera" so that lots of time isn't spent correcting the image on the computer. Beginning and more advanced students will gain a better understanding of subject matter and image content. Each student will also get one-on-one instruction on the controls and functions found on their own personal cameras.

Students are encouraged to bring in examples of their work for a personal critique by the instructor. Small assignments will be given to gauge understanding of the lessons. The instructor will make his E-mail available during the class as well as afterwards so that students will be able to continue to learn and grow. So, grab those instruction manuals that are collecting dust on the shelf or sitting at the bottom of your camera bag and come on down as we demystify the principles of digital photography. Students will learn the basic skills needed to "get the most out of their digital cameras" in a friendly and nurturing environment. This course is perfect for beginning students as well as seasoned amateurs who would like to brush up on some basic skills. No previous photographic knowledge is necessary. 35mm based SLR's and Point and Shoot cameras are welcome. Film based shooters are welcome as well and may have their film processed and burned onto a CD by their labs.

In the Intermediate Digital Photography course, students will learn how to see when they are looking through the view finders of their cameras. Instead of just pointing and shooting, you will begin to explore how what you are looking at makes you feel and when it is just right to take the picture. We will also take a look at some of the many different types of Photography such as: portrait, landscape, still life, sports and bstract. Students should already be familiar with the basics of Photography as well as the controls and functions of their own cameras. This course is perfect for students who would like to learn how to begin to look at the different types of photography that are out there. We will talk about composition and "visual" content whether to compose vertically or horizontally what to include in the background, or not as well as many other topics. Each week, students will be given assignments that will test their ability to shoot in new and different ways. Real barbecue is wood-smoked - we're not talking burgers and hotdogs. BBQ chef David Schaefer, owner of Stump Jumper BBQ Catering in Concord, MA, will teach the essentials for making the real thing. We'll learn about the right cuts of meat, sauces, and seasonings to prepare world- class barbecue, in your own back yard. We'll sample Memphis Style spareribs, Carolina Style pulled pork, chicken, and Texas Beef brisket. You'll learn how to prepare these succulent meats and some of the side dishes that complement them, and about marinades, rubs, brines, and sauces. You'll find out which ingredients are best for long, slow barbecue flavors vs. high-temp grilling, and how to create specific flavors for specific foods. Bring a few sealable containers for any leftovers. (This class will be mostly lecture and demo, due to the fact that Real Barbecue takes many hours to smoke, so we'll prepare you to do it in your own back yard, with your own cooking equipment.) Cost includes a satisfying, authentic BBQ feast.

Marie will introduce you to a basic tool kit, explaining how to use the most common tools you'll need to fix everything in your home. Learn how to use a drill and how to install the right wall anchors for hanging curtain rods, towel bars, and more. See what is inside your toilet tank and how simple it is to fix without calling a plumber. Take a faucet apart and discover the basics of how to repair or replace it. Learn how to patch holes in a wall and use a caulking gun. Marie will also spend as much time as possible answering your specific questions. This course is perfect for anyone who is ready to get the information and practical advice they need to successfully take on and complete basic home improvement and repair projects.
